We can never get enough fruit in our house, especially in the summertime. There is such an abundance of beautiful tastes and textures to savor this time of year. My children and I love traveling to local orchards and farms to explore the beauty of these fruits as they grow naturally. There is something so satisfying and glorifying about picking fruit from the vine and enjoying the sweet tastes given to us by a loving and creative God! I have been making this salad for a few years, and it never disappoints. We often have it for breakfast, but it is just as refreshing at the end of a hot day paired with a delicious grilled dinner.
Ingredients:
- 4 cups of summer fruit. I like to use strawberries, blueberries, watermelon, grapes, or kiwi.
- 3-4 drops of pure lime essential oil
- ¼ cup of honey (local organic is best)
- 1 tbsp. fresh mint
Directions:
Cut fruit into similar sizes and add to a bowl. In a separate bowl, drop lime essential oil into the honey and whisk together. Add the honey mixture to the fruit and combine. Chop the mint then sprinkle into the salad. Enjoy!
